This is mix recipe of veg and non veg low cal healthy snacks. You can serve with Soup,cocktail, with food as a salad or anytime to satisfy your hunger pangs.
You can experiment with different vegetables and meat. combinations are unlimited.

(1) Stuff Cucumber Cups

You Will Need
•    2 English cucumber (also called seedless),
•     Cut into one and half inches discs.
•     Crumbled cottage cheese (home made) or malai paneer crumbled
•    Salt, pepper, green chillies.
•    Finely chopped fresh coriander or mint.

Directions

•    Using melon baller or spoon, scoop out the middle of each cucumber disc.
•     In a bowl mix crumbled cheese, mint, salt and pepper
•     Fill each cucumber cup with mixture.  Chill
•     Sprinkle some olive oil or chilli oil (optional) before serving.
•     Serve on chilled platter.

(2) Cucumber cups with barbecue chicken


2 medium size cucumbers
Boneless chicken
Vinegar, barbecue sauce or oyster sauce and hot and sweet chilli sauce as per your taste.
Salt, chilli and pepper.
Olive oil.

Cube boneless chicken in very small pieces.
Add couple of table spoons of oil in a wok. Add chicken pieces. Stir and cook for couple of minutes till done add barbecue sauce, hot and sweet sauce, salt, chilli, pepper as per your taste. Check seasonings. Keep it aside for cooling. Cool completely to room temperature.

Make small cups of the cucumbers with skin. Cut into rounds 1-inch to 1 1/2-inches thick. Scoop out the middles to create a cup.  Bottom layer should be intact.

Fill the cups with chicken and garnish with fresh parsley or mint.

(3) Ham, cucumber Tomato-Basil Skewers

Makes: 16 pieces
•     16 small fresh cucumber cubes or thinly slices cucumber
•     16 fresh basil or mint leaves
•     16 cherry tomatoes
•     Extra-virgin olive oil, to drizzle
•    Coarse salt & freshly ground pepper
•    4 ham slices cut each in 4 pieces.

Thread one piece of each fresh vegetable, meat and herb in an attractive combination of colors in a tooth pick.

You can use different combinations like cucumber, mint, roasted chicken (sausages piece) and processed cheese.

Or baby onions processed cheese cherry or cherry tomato combination.

Pineapple cubes, cherry and cheese cube.

Watermelon cucumber and cheese.
Choice is unlimited...

You can serve in a cold platter or alternatively you can put lots of ice in a shallow bowl and arrange Skewers on the bed of ice. When you are adding roasted or cooked meat do not serve on ice cube bed. Serve on room temperature platter.

(4) Croutons


2 bread slices cut in small round discs.
Shredded Pizza cheese or processed cheese.
Mini Slices of Ham, salami or any cold cut.

Method: Bake discs of bread in hot oven till golden brown. Topped with shredded cheese. Bake for couple of minutes till cheese is melted.
Keep a mini slice of cold cut meat on the Crouton or keep the Crouton on the cold cut meat. Serve

Now take a chilled large platter. Arrange all the appetizers on bed of Lettuce leaves.
