Fabulous strawberry cream cheese cake.
Its my daughter's Birthday and I thought of making something pretty and low in sugar.
So for her birthday cake I chose cream cheese Icing.
Tangy and low in sugar.
Ingredients:
Basic sponge cake. (bake one day before icing and keep in fridge.)
3/4 cup chilled milk + 1 tea spoon grounded sugar (For soaking the cake)
For Icing:
Fresh cream 200 gm (Heavy Cream)
Cream cheese 1/2 cup
Strawberry Slices
Grounded Sugar 2 table spoon or more
Fresh Strawberry puree + 2 table spoon sugar boiled and cooled(Few table spoons depend on the color you want)
Equipment
Large glass bowl,Electric beater, Spoon
Method:Keep all the ingredients and Equipment in freezer to chill. for at least 15 minutes.
Beat cream and cream cheese on low speed for couple of minutes.
Add Grounded sugar one spoon at a time till icing in slightly thick, Add puree and beat till soft peaks.
In between check the color and sugar.
As per your requirement add more puree for color and more grounded sugar as per your taste.
Beat till icing is thick enough to hold its shape.
Slice sponge cake in two layers.Soak cake with chilled milk and sugar syrup. Spread the icing liberally.
Cover with top layer. soak with chilled milk.
Cover with icing and topped with Loads of strawberry slices.
Chilled in fridge for minimum 1 hour before slicing and eating.
