Basic Cake (Sponge Cake)
What You Need
Ingredients
3 or 4 eggs
1 or and 1/4 cup Maida (all-purpose flour)
1/2 cup oil sunflower, olive oil or veg oil
¾ cup Sugar
¾ tea spoon baking powder
Vanilla, orange or lemon essence

1. Combine the ingredients for the cake: Sieve maida and Baking powder and keep aside
2. Beat the eggs: Beat Three or four egg whites (depend on the eggs size) till stiff add powder sugar or sugar litter by little and keep beating with egg beater till very stiff add egg yokes one by one and keep beating the mixture until well combined and shiny.
3. Add Oil: Add oil little by little and keep beating the cake mixture with electric beater till all the oil is absorber into cake mixture . In this stage mixture should be airy and foamy.
4. Add all purpose flour: Now remove the beater and add sieved Flour and baking pd in the egg mixture and mix with cut and fold method till everything is well combined. Be sure the mixture is still airy and foamy. Do not over mix it.
5. Add other ingredients: Now at this stage decide which flavour you want to add to the cake. If you want plain just add vanilla essence, nuts or lemon or orange juice and rind. Well combine the mixture.
6. Dust the Mould. Now grease and dust the baking mould of any shape of your choice . Pour the mixture.
7. Bake the Cake: Bake the cake in 170 degree till done..
You can make Fruit Loaf of same recipe using Loaf Mould.
After cool it completely you can icing the cake in different flavours.
