Cumin Rice
Ingredients:
2 cups Good quality Basmati rice
4 cups water
1 table spoon white cumin
or shah jeera (black)
1tea spoon salt
1Table spoon of lemon juice
Star aniseed, couple
of cloves and 1 bay leaf optional
(Coriander leaves,
fried onion and fried cashew for garnishing)
If you want to make plain cumin rice for every
day meal do not add optional.
For special occasions
add spices and garnish.
Method :
Wash and soak good
quality basmati rice in water for ½ an hour. Drain the water and keep aside.
Now take a large
glass ware or ceramic or stone ware large bowl.
Add couple of table
spoons of olive oil or pure ghee (clarify butter) in a glass bowl.1
Add cumin and spices
Cook on high
uncovered for 3 minutes.
Remove from microwave
and add Rice, water, salt, lemon juice and 4 cups water.
Cover and microwave high for 5-6 minutes.
After that microwave 50% for 5-6 minutrs
when done again microwave high for 5-6 minutes.
Whole procedure will take 15-18 minutes.
Let the bowl stand in microwave for couple of minutes.
Take it out make rice fluffy with a fork and serve with choice of meat, fish, vegetable curry or daal.
Note: The bowl for making rice should be large enough to accommodate rice and boiled water and should be covered while making the rice.
Water depend on the quality of rice. Standard ratio of rice and water is 1 cup rice and 2 cups of water, but in pre soaked good quality rice 3amd 1/2 cup water is sufficient.
After microwave rice will be little wet. Let it stand in the microwave for couple of minutes, they will soak the water.
