Ingredients:

1-1/4 cups warm water or milk
2 tablespoons olive oil
3 all-purpose Flour (Maida)
Up to 1/4 cup more for flouring the work surface
1 teaspoons sugar
3/4 teaspoon salt
1 teaspoon rapid rise yeast

Instructions:

1. Combine yeast with Sugar and 1/2 cup water and let stand for 10 minutes. This activates the yeast.
2. Sift 3 cups flour with salt and add yeast mixture.
3. Add  more  water, mix with wooden spoon and then with hands.
4. Knead the dough on a floured surface for about 5 minutes - 10 minutes. For soft pitas, dough should be a little sticky. If it’s dry, add a little more water (1 TBS at a time).
5. Lightly oil the dough surface and a clean bowl. Put the dough in the bowl, cover with a clean dishtowel and let rise for about 2 hours or more (depend on the weather conditions) in warm place till the dough is double in size.
6.Now press the dough and knead slightly to remove the excess air.
7. Make small balls of dough and roll in small disks and keep on floured surface for half an hour or till slightly puffed,
8.Bake pita in preheated 200 degree  C oven for 4-6 minutes.
9. Cool for few minutes on a wire rack.
10. Cut each Pita bread into two halves and fill with your favorite fillings.
Mine is Masala chick peas topped with salad and Tofu.
